Courgette and mushroom rice recipe


Sometimes it’s best to keep things simple, and this delicious rice dish from Greedy Gourmet is the perfect example.


A go-to dish for busy weekdays, it’s easy to adjust for any leftover veggies you have in the fridge.


Nice and healthy, and really simple to throw together, you can’t go wrong here!




Overview: 

Prep time: 15 minutes

Cook time: 30 minutes

Serves: 4 people


Ingredients: 

200g brown rice

1 tbsp oil

125g mushrooms, chopped

125g courgette, chopped

2 bell peppers, chopped

1/2 tsp salt

1 spring onion


Instructions:

  1. Cook the rice following the packet’s instructions.

  2. Drain the rice and set it aside.

  3. Heat the oil in a large frying pan.

  4. Add the mushrooms, courgette and bell pepper.

  5. Fry for around 5 minutes until the veg is tender.

  6. Add the rice to the pan and mix well.

  7. Sprinkle with spring onion and serve.



Storage tips

Once cool, put this rice in an airtight container and keep in the fridge for up to 3 days.
