Super Easy Date, oat, and banana bites

Kerry Brouillet the founder of Loving Life With Lemons has just shared another of her healthy sweet treats with us and we can’t wait to try this one!


She writes - Do your kids enjoy a sweet treat after school? Mine certainly do, so I’m always thinking of ways I can get more nutrients and filling ingredients into that after school snack, but still satisfying enough so they don’t keep asking me for more food before dinner!


This is it !! Using the bananas and dates from my 2 week Herogo box this week I made my Golden Date, Oat and Banana bites! They are so satisfyingly sweet with no added sugar, using only healthy ingredients, this makes a great afternoon snack or fuel before kids afternoon sports activities!! Also makes a great afternoon treat for mum with a cup of tea or match latte!

Makes approx: 12 small squares

Serving size: 2 squares


Ingredients

  • 1 large ripe banana

  • 8 soft dates, peeled and pitted

  • 2 tbsp of coconut flour

  • 1 tbsp of Chia seeds

  • 1 cup whole, gluten free oats

  • 1/4 cup dark chocolate chips (optional)



Preparation

  1. Preheat oven to 175 Celsius, and coat one small oven dish approx. 9x6inchs with coconut oil.

  2. Add the banana to the food processor and blitz until broken down.

  3. Next, add dates and chia seeds and blitz until smooth.

  4. Remove cover, add oats and coconut flour, then blitz again until combined. Just 2-3 pulses.

  5. Add mixture to your oven dish, top with dark chocolate chips and cook for 35 minutes until golden brown.

  6. Cut into squares and serve warm or cold. The bites will remain a little chewy.




Tips

To store : Store in an airtight container for up to 1 week!
