Ingredients

  • 4 large onions, thinly sliced

  • 2 tablespoons butter

  • 2 tablespoons olive oil

  • 4 cups beef or vegetable broth

  • 1/2 cup dry white wine (optional)

  • 1 tsp sugar

  • Salt and pepper to taste

  • 4 slices of baguette

  • 1 1/2 cups shredded Gruyere or Swiss cheese


Directions

1.Caramelize the Onions:

In a large soup pot or Dutch oven, melt the butter and olive oil over medium heat.

  • Add the thinly sliced onions and cook, stirring occasionally, for about 10 minutes until they start to soften.

  • Reduce the heat to low and sprinkle the sugar over the onions. Continue to cook, stirring occasionally, for another 20-25 minutes until the onions turn golden brown and caramelized.

2.Deglaze the Pot:

If using white wine, pour it into the pot and scrape up any browned bits from the bottom. Let it simmer for a few minutes until the wine reduces slightly.

3.Add Broth and Seasoning:

Pour in the beef or vegetable broth, and season with salt and pepper to taste. Bring the soup to a simmer and let it cook for an additional 10 minutes to meld the flavors.

4.Prepare the Bread and Cheese: While the soup is simmering, preheat your oven's broiler.

Toast the slices of baguette or French bread until they're lightly browned.

5.Ladle and Serve: Ladle the hot soup into oven-safe bowls. Place a toasted slice of bread on top of each bowl, and sprinkle a generous amount of shredded Gruyere or Swiss cheese over the bread.

6.Broil until Bubbly: Place the bowls under the broiler and cook until the cheese is bubbly and golden brown, about 2-3 minutes. Keep a close eye on it to prevent burning.
