Leftover turkey curry recipe


Don’t let your leftover Thanksgiving turkey go to waste! With just a few ingredients, you can transform it into this delicious curry.



Inspired by a recipe from food.com, it’s full of delicious flavours that’ll keep you coming back for more.

Serve with rice and naan bread to give your tasty turkey a whole new lease of life!



Overview:

Prep time: 15 minutes

Cook time: 25 minutes

Serves: 4 people


Ingredients:

Oil

1 onion, chopped

2 cloves of garlic, minced

1 chilli, deseeded & chopped

1 tsp cumin

1 tsp coriander

1/2 tsp turmeric

1 aubergine, cubed

150g cooked turkey, cubed

2 carrots, peeled & chopped

1 bell pepper, deseeded & chopped

500ml chicken stock


Instructions:

  1. Heat some oil in a large pan.

  2. Add the onion, garlic and chilli, then cook for 2 minutes.

  3. Add the spices and cook for another 2 minutes.

  4. Add the aubergine and turkey. Cook for 5 minutes, until the turkey has started to brown.

  5. Add the carrots and bell pepper. Stir well.

  6. Add the stock, bring to the boil, then simmer for 20 to 25 minutes until the veg is tender.

  7. Serve hot.
