Mini Cauliflower Pizzas

These mini cauliflower pizzas are a great way to sneak some of those veggies back in to your diet or use up that cauliflower that has been sitting in the back of your fridge! And who doesn't love a pizza?! You can get creative with this recipe as the possibilities of toppings are endless.

Plus, here's the secret ingredient: it's a fantastic way to get your kiddos into cooking and keep them happily busy after school.

Prep Time: 10 minutes Cook time: 20 minutes

Serves: 2 people

Ingredients


  • small head of cauliflower, florets separated and finely grated (about 2 cups)

  • 1 egg

  • 1/2 cup shredded mozzarella cheese

  • 1 teaspoon dried oregano

  • 1/2 teaspoon garlic powder

  • 1/4 teaspoon salt

  • 1/4 teaspoon black pepper

  • 1/2 cup pizza sauce

  • 1/2 cup shredded mozzarella cheese (for topping)

  • Your favorite pizza toppings (e.g., sliced cherry tomatoes, sliced olives, diced bell peppers, etc.)




Directions


  1. Preheat the oven, finely grate cauliflower, and microwave it before squeezing out excess moisture

  2. Combine cauliflower with egg, 1/2 cup mozzarella, oregano, garlic powder, salt, and pepper in a bowl.

  3. Shape the cauliflower mixture into two mini pizza crusts on parchment-lined baking sheet.

  4. Bake the crusts in the preheated oven for 20 minutes until golden and firm.

  5. Spread pizza sauce on crusts, top with 1/2 cup mozzarella and favorite toppings.

  6. Bake pizzas for 5-7 more minutes until cheese is melted and bubbly.

  7. Let cool briefly, then slice, serve, and enjoy your mini cauliflower pizzas!


Tips!

Make a bigger batch and freeze the pre-made mini pizza crusts in a resealable bag add your toppings heat it in the oven for ten minutes and use them as an easy lunch!
