Napa cabbage omelette recipe


New to napa cabbage? Often called Chinese cabbage, this tasty Asian vegetable has a slightly sweet and mild flavour, and it's often used in kimchi and salads.


It's easy to grill and steam, but if you want to try something different, you’ll love this recipe from In Erika’s Kitchen.



Putting a Chinese spin on a classic omelette, it’s a quick and easy way to get your veg fix for breakfast.



Overview: 

Prep time: 5 minutes

Cook time: 10 minutes

Serves: 2 people



Ingredients: 

1 tsp oil

200g napa cabbage, shredded

1/2 onion, thinly sliced

1 clove of garlic, minced

3 eggs

1/2 tsp soy sauce


Instructions:

  1. Put a frying pan over a medium-high heat.

  2. Add the oil, cabbage and onion, and sauté for around 5 minutes until they start to brown.

  3. Add the garlic, stir and cook for another 30 seconds.

  4. In the meantime, whisk the eggs in a small bowl. 

  5. Add soy sauce to the eggs and whisk a little more.

  6. Spread the vegetables evenly around the frying pan, then pour the egg mix on top so the veg is covered.

  7. Cook for around 3 minutes so the eggs are mostly set, then carefully flip the omelette.

  8. Cook for a minute on this side.

  9. Once both sides are brown, serve hot.
