New to napa cabbage? Often called Chinese cabbage, this tasty Asian vegetable has a slightly sweet and mild flavour, and it's often used in kimchi and salads.

Putting a Chinese spin on a classic omelette, it’s a quick and easy way to get your veg fix for breakfast.

Prep time: 5 minutes
Cook time: 10 minutes
Serves: 2 people
Ingredients:
1 tsp oil
200g napa cabbage, shredded
1/2 onion, thinly sliced
1 clove of garlic, minced
3 eggs
1/2 tsp soy sauce
Instructions:
Put a frying pan over a medium-high heat.
Add the oil, cabbage and onion, and sauté for around 5 minutes until they start to brown.
Add the garlic, stir and cook for another 30 seconds.
In the meantime, whisk the eggs in a small bowl.
Add soy sauce to the eggs and whisk a little more.
Spread the vegetables evenly around the frying pan, then pour the egg mix on top so the veg is covered.
Cook for around 3 minutes so the eggs are mostly set, then carefully flip the omelette.
Cook for a minute on this side.
Once both sides are brown, serve hot.
Storage tips
We recommend eating this omelette straight away.
