Not sure how to use your papaya? Don’t let it go to waste! Flip them into tasty fruit pancakes instead.
This simple recipe from Mouths of Mums uses just a handful of ingredients, and it’s a great way to sneak more fruits into breakfast time.

Serves: 4 people
Ingredients:
1 papaya
200g self-raising flour
2 tbsp caster sugar
1 tsp baking powder
1 egg, lightly whisked
250ml milk
20g butter, melted
Oil
Instructions:
Cut the papaya lengthways and remove the seeds. Take one half of the fruit, scoop out the flesh and blend until smooth. Set it aside.
Take the other half of the fruit and cut the flesh into cubes, removing the skin. Set them aside.
Put the flour, sugar and baking powder in a large bowl and mix well.
Put the whisked egg in a jug with the milk and butter. Add your blended papaya.
Pour this egg-papaya mixture into the flour mixture and whisk until smooth.
Put a frying pan over a medium-low heat and add some oil.
Once hot, add about 80ml of the mixture to the pan. Cook the pancakes for around 2 minutes on each side, until golden.
Repeat with the leftover batter to make 8 pancakes.
Serve with yoghurt and the chopped papaya.

We recommend eating these pancakes straight away.
