Fried broccoli & capsicum with rice

Sometimes it’s best to keep things simple. Cue this recipe from Boss Kitchen.


By combining a handful of fresh veggies with rice and a soy sauce dressing, they’ve created a delicious dish that should quickly be added to your weekly meal rotation.


So quick and easy to make, it’s a tasty (and healthy!) way to use up the fresh ingredients in your HeroGo box.

Ingredients

  • 350g broccoli, rinsed & chopped into florets

  • 3 tbsp vegetable oil

  • 80g onions, sliced

  • 1 clove of garlic, minced

  • 180g capsicum, deseeded & sliced

  • 85g carrots, peeled & cut into thin strips

  • 380g tomatoes, rinsed & chopped

  • 1 tsp salt

  • 1 tsp black pepper

  • 1 bay leaf

  • 130g long grain rice

  • 1 tbsp soy sauce

  • 1 tbsp lemon juice


Preparation

  1. Put the broccoli in a saucepan with some water and boil for 3 to 4 minutes until softened. Drain and put aside.

  2. Heat 2 tablespoons of the vegetable oil in a large frying pan. Add the onion and garlic and cook for 2 minutes, stirring occasionally.

  3. Add the broccoli and cook for another 3 minutes.

  4. Add the capsicum, carrots and tomatoes to the pan with the salt, pepper and bay leaf. Cook until the tomatoes have softened, stirring occasionally.

  5. Follow the packet’s instructions to cook the rice.

  6. While the rice is cooking, put the last tablespoon of vegetable oil in a small bowl with the soy sauce and lemon juice. Mix well.

  7. Once the rice is cooked, drain it and pour the dressing on the top. Mix well so the rice is covered in the dressing.

  8. Serve your rice in the middle of the plate and add the cooked veg around the sides. If you like, garnish with fresh herbs, then enjoy!
