Plum, date and fig fruit salad


A classic fruit salad with a seasonal twist, this is one recipe you won’t want to miss!


Combining the sweetness of dates and figs with the freshness of the mint, we love how the almonds top it off with a lovely crunch.




A unique recipe that’s so quick to make, this fruit salad makes a delightful dessert or scrumptious side dish.


Overview:

Prep time: 10 minutes

Serves: 2 people


Ingredients:

1 lime, juice only

2 tbsp honey

1 tbsp extra-virgin olive oil

Pinch of salt

2 plums, pitted & sliced

8 dates, pitted & halved

8 figs, halved or quartered

8g fresh mint leaves, torn

30g almonds, chopped


Instructions:

  1. To prepare the dressing, whisk together the lime juice, honey, olive oil and salt in a small bowl. Set aside.

  2. Put all the fruit in a large bowl and combine.

  3. Sprinkle with mint leaves and almonds, then drizzle the dressing over the salad.

  4. Toss gently so everything is coated in the dressing and serve immediately.


Tips:

If you’re not a fan of almonds, try switching them for pistachios.
