Potato and parsnip mash recipe


Perfect for any Thanksgiving feast, this simple recipe turns two humble ingredients into the most delicious side dish.

Inspired by a recipe from Mashed, it’s ready in just 20 minutes so you can easily throw it together amongst the other holiday meal prep.

Overview:

Prep time: 10 minutes

Cook time: 10 minutes

Serves: 4 people


Ingredients:

450g potatoes, peeled & chopped

450g parsnips, peeled & chopped

4 tbsp milk

4 tbsp butter

Salt & pepper, to taste


Instructions:

  1. Bring a large pot of water to the boil, then add the potatoes and parsnips.

  2. Boil for 10 to 15 minutes, or until the veg is tender.

  3. Drain, then put the veg back in the pot. Set aside for 5 minutes.

  4. After the 5 minutes have passed, add the milk, butter and seasoning to the pot.

  5. Use a masher to mash the veg to your preferred consistency.

  6. Serve hot.
