Potato pancakes

Put a savoury twist on this much-loved dish and try these delicious potato pancakes from Eat Something Vegan.


Made with only a handful of ingredients, they’re a great way to enjoy something a little different for breakfast, lunch or dinner.


They go great with any of your favourite dips or sauces, so why not try making your own?


We recommend this easy spring onion dip recipe from delicious.. All you have to do is blitz together 180g cream, 4 spring onions, 1 clove of garlic, juice of half a lemon and seasoning.

Ingredients

  • 3 medium-sized potatoes (around 680g), washed

  • 40g flour

  • 1 tbsp garlic powder

  • 1/2 tbsp oregano

  • 1/2 tsp salt

  • 1/2 tsp pepper

  • 60ml oil


Preparation


  1. Grate the potatoes into a large bowl.

  2. Take a handful of the potato and squeeze it tightly. Get rid of any liquid and put the potato back in your bowl. Continue until you’ve squeezed all the potato.

  3. Add the flour, garlic powder, oregano and seasoning to the bowl. Mix well.

  4. Heat 2 tablespoons of oil in a large pan over a medium heat.

  5. When the oil is hot, take a heaped tablespoon of your potato mixture, add it to the pan then use a fork to flatten out your pancake.

  6. Keep going until you have used all the mixture or you have run out of space in the pan.

  7. Cook each pancake for 3 to 4 minutes on each side, until they turn golden.

  8. Serve hot with your favourite dip, sauce or salad.
