Preparation
Grate the potatoes into a large bowl.
Take a handful of the potato and squeeze it tightly. Get rid of any liquid and put the potato back in your bowl. Continue until you’ve squeezed all the potato.
Add the flour, garlic powder, oregano and seasoning to the bowl. Mix well.
Heat 2 tablespoons of oil in a large pan over a medium heat.
When the oil is hot, take a heaped tablespoon of your potato mixture, add it to the pan then use a fork to flatten out your pancake.
Keep going until you have used all the mixture or you have run out of space in the pan.
Cook each pancake for 3 to 4 minutes on each side, until they turn golden.
Serve hot with your favourite dip, sauce or salad.
