Quick & Easy Stuffed Bell Peppers

Serves: 4 people

Ingredients

  • 4 red, yellow or green bell peppers

  • 250 g minced beef

  • 2 cups cooked rice (white or brown)

  • 1 onion diced

  • 3 garlic clove, minced

  • 1 tomatoe diced

  • 2 teaspoons lemon zest

  • 1/2 cup parsley shopped

  • ⅔ cup grated Parmesan cheese

  • 1/4 cup almonds diced (optional)

  • 2 tbsp olive oil

  • Fresh or dry mint (optional)

  • Salt & pepper



Directions

  1. In a pan brown your beef in 1 tbsp of olive oil and break it into crumbles.

  2. Add onion and garlic to the pan, then tomato, when liquid evaporates add lemon zest, parsley/mint, rice, salt and pepper.

  3. Slice top off peppers (or in half), brush with olive oil inside and outside and fill them up with the mixture. If they are cut from the top recover with the stems. Add a sprinkle of cheese on top for extra flavour.

  4. Bake in preheated oven on 180 covered with foil for 15 to 20 minutes.

Grab some crusty bread and add salad to accompany this quick and easy dish.
