Root veg soup recipe


Not sure how to use the veg in your HeroGo box? This soup from BBC Food is just what you need!


It’s such an adaptable recipe - you can use any hard, starchy root vegetables, so you can really make the most of your groceries.



Serve with croutons and a chunk of fresh bread for a tasty and nutritious meal or starter.



Overview:

Prep time: under 30 minutes

Cook time: 30-60 minutes

Serves: 4 people


Ingredients:

2 tbsp oil

2 onions, chopped

800g root veg (like carrots, butternut squash, beetroot or sweet potato), peeled & chopped

2 cloves of garlic, minced

2 vegetable stock cubes

Pepper, to taste


Instructions:

  1. Heat the oil in a large pan, then fry the onion for 6 to 8 minutes until softened and browning.

  2. Add the root veg and cook for 5 minutes, stirring every now and again.

  3. Add the garlic, stir and cook for a few seconds.

  4. Crumble the stock cubes into the pan, then add 1 litre of water. Bring the mixture to the boil then reduce the heat. Loosely cover with a lid, then simmer the mixture for around 20 minutes, stirring occasionally, until the veg is soft.

  5. Remove from the heat and blend until it reaches your preferred consistency.

  6. Season, stir and serve.
