Lettuce dive right into the leafy green wonderland that is our Sweet Potato Salad Spectacular! If you're ready to turn over a new leaf in your salad game, this recipe by @lelou.lou will have you saying, "Oh kale yeah!"


Prep Time: 15 minutes Cook time: 20 minutes

Serves: 2 people


  • 2-3 medium sweet potatoes or 1 large

  • 2 red onions cubed

  • Salad leaves of choice

  • Feta cheese

  • Nuts of choice

  • Chilli flakes

  • 1 tbsp olive oil



  • 1 clove garlic

  • Small piece of ginger grated

  • 2 tbsp olive oil

  • 1/2 lemon juice

  • Lemon zest

  • 1 tbsp Maple syrup (or dates syrup or honey)

  • Salt and pepper


  1. Start by preheating the oven.

  2. Peal the sweet potatoes, and cut into cubes or wedges.

  3. Rub the Potatoes with olive oil, salt & pepper and chilli flakes.

  4. Bake the potatoes on a baking tray lined with parchment sheet till golden/brown.

  5. In the meantime mix the dressing ingredients and let it infuse for a better flavor.

  6. Once the potatoes are done cooking, Let them cool down.

  7. Place the greens, the cooled potatoes, the onions, the feta and the nuts in to a bowl.

  8. Drizzle your dressing on top of your salad

  9. ENJOY!


Prep ahead of time and store your salad in the fridge for up to three days! Just remember to add your greens and dressing before serving.
