Zucchini boats

These Zucchini Boats are sure to make your mouth water and they might even become your weekly dinner staple. With only a handful of everyday ingredients and a quick preparation time, this recipe is a true gem for those looking for a delicious and hassle-free dish.

Serves: 4 people

Ingredients

  • 2 large or 3 medium zucchini

  • 1 large egg

  • 1 cup bread crumb

  • â…” cup grated Parmesan cheese

  • 1 onion diced

  • 2 garlic clove, minced

  • 1/2 cup cherry tomatoes cut

  • 2 teaspoons lemon zest

  • 1tbsp italian seasoning

  • 1/3 cup walnuts diced

  • 2 tbsp olive oil

  • Salt & pepper



Directions

  1. Start by halving the zucchini lengthwise and scoop out the flesh

  2. To make the filling chop the scooped flesh and press out any excess moisture

  3. In a pan heat up 1 tbsp of olive oil and cook the diced onion and garlic

  4. To the pan add the zucchini flesh

  5. Combine everything and let it cool down

  6. Then add the egg, breadcrumbs, cherry tomatoes, lemon zest, Parmesan, walnuts and the seasoning

  7. Mix until everything’s well combined

  8. Brush the zucchini with olive oil inside and outside then load up the filling

  9. Transfer to preheated 180 degree oven and bake for 16-18 minutes until the filling is set & nicely golden brown,

  10. Enjoy!

Tips

This recipe is perfect for leftovers!

Simply store them in the fridge for up to 3 days and then reheat them in the oven.
