Cauliflower Fried Rice- Veggie Delight!

Serves: 4 people

Ingredients

  • 1 medium head of cauliflower, grated or finely chopped

  • 2 tablespoons vegetable oil

  • 1 small onion, finely diced

  • 2 cloves garlic, minced

  • 1 cup frozen mixed vegetables

  • 3 tablespoons soy sauce

  • 2 tablespoons oyster sauce

  • 2 large eggs, lightly beaten

  • 2 green onions, chopped (for garnish)

  • Sesame seeds (optional, for garnish)



Directions

  1. In a large skillet or wok, heat the vegetable oil over medium-high heat.

  2. Add the diced onion and minced garlic, sautéing until the onion becomes translucent.

  3. Add the frozen mixed vegetables to the skillet and cook until they are heated through.

  4. Push the vegetables to one side of the skillet and add the lightly beaten eggs to the other side. Scramble the eggs until cooked through.

  5. Add the grated or finely chopped cauliflower to the skillet and stir everything together.

  6. Pour the soy sauce and oyster sauce over the cauliflower mixture, stirring well

  7. Cook for an additional 2-3 minutes, allowing the cauliflower to absorb the sauces and become tender.

  8. Garnish the Cauliflower Fried Rice with chopped green onions and sesame seeds.

Tips!

To achieve the perfect "fried" texture in your Cauliflower Fried Rice, ensure that the grated or chopped cauliflower is dry before adding it to the skillet.
